Ingredients

Batter

2 cups rice flour

1 cup unsweetened coconut milk

2 cups water

2 teaspoons ground turmeric

1 teaspoon sugar

1/2 teaspoon salt

1 teaspoon curry powder

3 green onions, cut into thin rings

Filling

4 tablespoons vegetable oil

1/2 yellow onion, very thinly sliced

1/3 pound boneless, skinless chicken breast, thinly sliced

12 medium-size raw shrimp, peeled, deveined and halved lengthwise

4 cups bean sprouts

2 cups sliced white mushrooms

Accompaniments

1 head red leaf lettuce or 2 bunches mustard greens, leaves separated and washed

20 sprigs combined Asian basil, mint, green and red perilla

1 cup Vietnamese Dipping Sauce (see recipe)
