Salt and freshly ground black pepper

1 store-bought pizza dough, defrosted

Flour, for dusting the rolling surface

1 cup monterey jack cheese

1/2 cup blue cheese crumbles

3 scallions, sliced

1 egg

A sprinkle of sesame seeds or poppy seeds
