1 tablespoon powdered green tea (also called matcha)

1 teaspoon sugar


8 ounces unsalted butter

4 large yellow onions, about 2 pounds, thinly sliced

1 vanilla bean

3 cups whole milk + more as needed

1 tablespoon Champagne vinegar or white wine vinegar, or to taste
