2 lbs boneless skinless chicken breasts, chopped

1 teaspoon salt

1 teaspoon pepper

1 tablespoon olive oil

1 medium red onion, diced

1 medium green bell pepper, diced

1 medium red bell pepper, diced

1 medium yellow bell pepper, diced

2 cloves garlic, chopped

2 15 oz cans fire roasted tomatoes

1 15 oz can black beans

1 quart chicken stock

1 teaspoon chopped chipotle chili peppers and adobo (from canned)

1 tablespoon smoked paprika

1 tablespoon cumin

1 teaspoon chipotle chili powder

1 teaspoon dried oregano

1 medium hass avocado, diced

1/4 cup fresh cilantro, diced

1/2 cup crumbled queso fresco cheese

12 small corn tortillas, cut in strips

2 cups vegetable oil, for frying tortilla strips
