It's really plain but more like a soup. Needs a lot more chili powder too. As vegetarian chili's go this one won't be made again .

Ingredients for 6 servings

2 teaspoon olive oil

2 carrots, peeled and cut into thin rounds

1 leek, green portion reserved for another use, whites cut into thin rounds

1 red bell pepper, stemmed, seeded, and flesh cut into medium dice

2 ribs celery, cut into thin slices

1 teaspoon fine salt

1 28-ounce can whole peeled tomatoes

1 quart cold water

1 15-ounce can red kidney beans

4 teaspoons chili powder, or to taste

2 cups cooked rice
