3/4 cup whole wheat flour

1/4 cup unbleached all-purpose flour + extra for dusting rolling surface

1/3 cup water


3 tablespoons vegetable oil

1 teaspoon mustard seeds

1/4 teaspoon turmeric

1/4 cup yellow lentils (toovar dal) or yellow split peas, cleaned, rinsed and drained

4 cups water

3/4-1 teaspoon cayenne pepper

2 teaspoons Madras curry powder

1 1/4 teaspoon kosher salt

Grated Swiss cheese or melted ghee
