2 tablespoons high-temperature cooking oil, such as peanut or canola oil, divided

1 1/2 pounds boneless, skinless chicken thighs, cut into bite-size chunks

2 sweet bell peppers, seeded and cubed into bite-size pieces

1 onion or 2 large shallots, sliced

1 1-inch piece fresh ginger root, grated or minced

3-4 cloves garlic, finely chopped

1 1/2 teaspoons five-spice powder (half a palmful)

3 tablespoons dry sherry

2 tablespoons honey or agave syrup

1/4 cup Tamari (dark soy sauce)

3/4 cup chicken stock

1 rounded tablespoon cornstarch

1/4 cup chives, chopped
