1 English cucumber, peeled, seeded and finely diced
2 ripe tomatoes, cored and finely diced
1/2 cup finely diced celery
3 scallions (white and green), finely diced
1 1/2 cups fresh squeezed grapefruit juice (about 2-3 large grapefruit)
2 tablespoons chopped fresh mint
2 tablespoons chopped flat-leaf parsley
Juice grapefruits and zest a grapefruit (about 1 teaspoon) reserve for use as garnish.
