Vegetable oil for frying

1 egg

1/2 cup milk

1 cup panko or other breadcrumbs

1 cup flour

4 teaspoons kosher salt

3 teaspoons pepper

2 teaspoons ground Sichuan pepper (see Note)

1 pound cleaned squid, bodies cut into 1-inch rings


2 teaspoons vegetable oil

1 teaspoon lime or lemon juice

1/4 to 1/2 teaspoon Asian fish sauce (see Note) or soy sauce

Pinch sugar

2 small bunches watercress, stems trimmed off
