I made this for dinner tonight. I was hoping this would turn out great, but it was only so-so...The garam masala we used was too hot for Teresa, and it was a little bland in other respects. This dish needs something, some other flavor. Maybe garlic, maybe just a different masala.

1 cup water

1 1/2 tbsp garam masala

2 tbsp coconut oil

2 cup sliced button mushrooms

1 can diced tomatoes(15-ounce)

1/2 x red onion, diced

2 cup baby spinach, torn into bits
