Ingredients

Crust:

1/3 cup unsalted butter

1 cup + 2 tablespoons flour

1/4 teaspoon salt

2 to 3 tablespoons ice water

Pie:

2 large firm-ripe pears

3 to 4 tablespoons dried Montmorency cherries or dried cranberries

1/2 cup + 1 tablespoon sugar

3 ounces unsalted butter, at room temperature

Tiny pinch of salt (a few grains)

1/4 to 1/3 cup ground almonds

1/2 teaspoon almond essence

2 eggs, lightly beaten

1 tablespoon Cognac
