1 to 2 Thai chiles or serrano or jalapeño peppers, seeded and minced (for a hotter sauce, leave the seeds in)

¾ cup chunky peanut butter

1 tablespoon minced peeled fresh ginger

2 cloves garlic , minced

2 tablespoons chopped fresh cilantro

2 tablespoons vegetable oil

1 tablespoon fresh lime juice , or more to taste

2 tablespoons soy sauce or Asian fish sauce , or more to taste

¾ cup coconut milk

2 to 3 shallots , finely chopped (about ½ cup)

½ teaspoon freshly ground black pepper

2 teaspoons sugar
