  • 1 lb lean prosciutto in 1 piece, plus 4 thin slices, cut into ribbons
  • 1 medium carrot, finely chopped
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 tsp fennel seeds
  • 2 small rosemary sprigs
  • 12 cups cold water
  • 3/4 lb lean ground pork
  • 6 large egg whites
  • 1 1/2 Tbsps fresh lemon juice
  • Salt
  • 1/2 cantaloupe, scooped into balls
  • 1 cup baby arugula
