1 medium red, yellow or orange bell pepper, cut into 1/4-inch dice (about 1 cup)

1 small sweet onion, cut into 1/4-inch dice (about 1/2 cup)

1/4 teaspoon ground cloves

1 1/2 tablespoons apple cider vinegar, or to taste
