12 oz package firm tofu

1 x small white onion

1 tsp fresh ginger, finely minced

2 cup orange juice, freshly squeezed

3/4 cup soy sauce

1 tbsp brown sugar, depending on how sweet the oranges are

1 tbsp clove garlic, finely minced

1 tbsp corn syrup

1-1/2 tsp ketchup

1 tsp tomato paste

1 tsp chili garlic sauce

1/2 tbsp sea salt

7 tbsp tapioca starch

3 cup rice vinegar

2/3 tbsp water

5 tbsp canola oil

1 tsp lime juice

1/4 oz black pepper, freshly ground

10 tbsp fresh water chestnuts, boiled, shelled and sliced

1 x cilantro, finely chopped
