3 tablespoons unsalted butter

4 thin slices of prosciutto (or Serrano), cut crosswise into 1-inch-wide strips with fat left on

coast salt and freshly ground black pepper

1/2 cup chicken stock

1/4 to 1/3 cup heavy cream
