  • 4 Tbsps olive oil
  • 3 tomatoes , quartered lengthwise
  • 3/4 cup long-grain white rice
  • 1 medium onion , chopped
  • 2 tsps ground cumin
  • 2 large onions , sliced
  • 3/4 tsp ground cinnamon
  • 1 cucumber , peeled, cut into rounds
  • 3 garlic cloves , minced
  • plain yogurt
  • 3/4 cup dried lentils , rinsed, picked over
