  • 2 Tbsps soy sauce
  • 1 Tbsp dry vermouth
  • 1 Tbsp cornstarch
  • 1 1/2 tsps sugar
  • 1 lb sirloin steak, sliced across the grain 1/8 inch thick
  • 2 Tbsps canola oil
  • 2 large garlic cloves, very finely chopped
  • 1 Tbsp finely chopped fresh ginger
  • 1 large jalapeƱo, seeded and julienned
  • 1 1/2 lbs bok choy, cut into 1-inch pieces
  • Salt and freshly ground pepper
  • 3 Tbsps chicken stock, canned low-sodium broth or water
  • 1/4 tsp asian sesame oil
