Ingredients for 8 servings

2 TB olive oil

2 cans (15 oz each) black beans, not drained

¼ cup Frontera Chipotle Salsa

1 tsp salt or to taste

1 TB oil

1 onion, thinly sliced

1 poblano chile, thinly sliced

2 cloves garlic, minced

½ tsp salt

½ tsp Mexican oregano

¼ tsp black pepper

1 jar (12 oz) roasted red peppers, drained, thinly sliced

2 pounds boneless skinless chicken breast, cooked and shredded OR 4 cups shredded rotisserie chicken

½ cup Frontera Chipotle Salsa

1 loaf (1 to 1 ½ pounds) Italian or French bread, measuring about 12 inches long by 3 inches wide

8 ounces Monterey Jack or Chihuahua cheese, shredded

Chopped fresh cilantro, for garnish
