10 ounces frozen spinach, defrosted and drained

14 ounces canned tomatoes, undrained and crushed

8 ounces tomato sauce, canned

1 shallot, minced

2 cloves garlic, minced

1/2 teaspoon crushed red pepper

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon sugar

1/2 teaspoon ground thyme

1/2 teaspoon ground sage

3 tablespoons fresh Italian parsley, chopped

1 cup lowfat mozzarella cheese, grated

16 ounces ziti pasta, cooked al denté and drained
