1 C pomegranate juice

1 C japanese plum wine

4 overwintered parsnips peeled and quartered lengthwise

olive oil

salt & pepper to taste

3 scallions shredded lengthwise

oil for frying

4 medium yukon gold potatoes

2 Tbs butter

2 scallions sliced thin

1/3 C creme fraiche (or cream)

kosher salt to taste

1 lbs lamb chops (about 4-6 chops)
