1 large navel orange

2 tablespoons olive oil

1 medium onion, chopped

1 carrot, chopped

1 rib celery, chopped

4 slices whole wheat bread, toasted and cut into cubes (21/2 cups)

3/4 cup mixed chopped dried fruit

2 teaspoons dried thyme

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup chicken broth

3 cloves garlic, minced

1 whole frying chicken (4 pounds)
