3 ounces whole milk (room temperature)

1-3/8 tablespoons cornstarch

1 whole egg, beaten

4 egg yolks, beaten

15 ounces heavy whipping cream

1/2 vanilla bean (I did not reduce this amount.)

1/4 cup + 1-1/2 teaspoons granulated sugar

3/4 cup cake flour

3/8 cup superfine sugar

1/2 +1/6 teaspoon baking powder (About 4.15 ml – I said some of these weren’t easy.)

pinch salt

8 teaspoons canola oil

2 egg yolks, beaten

3 ounces milk

remaining vanilla bean seeds, scraped from the pod

1/2 teaspoon almond extract

1/2 cup egg whites (about 4 large)

1/2 teaspoon cream of tartar

4 ounces semi-sweet chocolate, finely chopped

4 ounces unsalted butter
