7 Ingredients

  • 1 1/2 tbsp organic butter
  • 1 1/2 cup organic onion, chopped (about 1/2 a large onion)
  • 2 - 3 x roasted organic poblano peppers, diced
  • 4 cup cooked organic white rice (try brown for a healthier version)
  • 1 lb organic low fat cottage cheese
  • 8 oz organic low fat sour cream
  • 2 cup organic cheddar or monterey jack (or mixed!) cheese, shredded
