1 large Spanish onion , finely chopped

½ tsp each ground ginger, saffron strands and paprika

4 large ripe tomatoes , skinned, seeded and chopped

50.0g butter

2.0 tbsp chopped fresh coriander

lemon quarters, to serve

100.0g Puy lentils

450.0g ready-diced lamb , cut into 1cm cubes

4.0 tbsp chopped fresh flatleaf parsley

½ tsp ground cinnamon

100.0g long grain rice

1.0 tsp turmeric

100.0g dried chickpeas , soaked overnight and drained
