cut down oil to less than 1/4 cup. this tends to be not spicy at all : great for kids, even with 1 1/2 tsp cayenne pepper.

Ingredients for 6 servings

1/2 cup canola oil

2 cup finely chopped onions (2 large)

3 inch stick cinnamon

3 tbsp finely chopped garlic

2 tbsp chopped ginger

2 cup chopped tomatoes (2 large)

1 tbsp salt

1/2 tsp ground black pepper

1 tsp turmeric

1 tbsp ground cumin

1 tbsp coriander

1 tbsp garam masala

1/2 tsp ground cayenne pepper

3 lb chicken thighs, bone in

1 cup sour cream, stirred

2 cup water

1/2 cup chopped cilantro (including stems)
