Delicious soup! Wonderful mix of fresh flavors. I made it with the chicken stock. It's a very thin broth-y soup. A great starter but not substantial enough as a main. I mixed my toddlers portion with a little rice cereal so he could scoop it easier. He loved it! Great way to get down the green vegis.

Ingredients for 4 servings

1 tablespoon safflower oil

1 medium leek, white and tender green only, thinly sliced

6 cups vegetable or chicken stock

8 ounces fresh sugar snap peas, stems removed, cut in half

1/2 bunch (8 ounces) fresh baby spinach leaves

1 16-oz can chickpeas, drained and rinsed

2 tablespoons fresh lemon juice

3 teaspoons lemon zest

salt and freshly ground pepper

fresh thyme leaves
