4 shallots , finely chopped

RADISH MINT SALAD

100.0g radishes , sliced

3.0 tbsp peanut butter (use smooth or crunchy)

1.0 tbsp fish sauce

1 lime , juiced

¼ tsp turmeric

1 red chilli , finely chopped

4 chicken thighs , cut into small chunks

flatbread or roti to serve (optional)

½ tsp ground cumin

¼ cucumber

1.0 tsp golden caster sugar

½ tsp ground coriander
