1 medium eggplant, cut diagonally into 1/2-inch-thick slices

1 small zucchini, cut diagonally into 1/2-inch-thick slices

1 red bell pepper, cored, seeded and quartered lengthwise

1 small red onion, cut into 4 slices

2 portobello mushroom caps, halved

Half of a whole-wheat baguette (18 oz, 18 inches), sliced lengthwise and cut in fourths

4 leaves red-leaf lettuce

8 oz smoked, lowfat mozzarella (about eight 1/2-inch-thick slices)
