  • 6 spears canned asparagus, finely chopped

  • 2 Tbsps vegetable shortening
  • 1 tsp salt, plus more for seasoning chicken
  • 1 tsp freshly ground pepper, plus more for seasoning chicken
  • 1/2 cup grated mozzarella
  • 2/3 cup prepared tomato sauce
  • 1 Tbsp dried oregano
  • 3 eggs
  • 1 1/2 cups all-purpose flour
  • 4 Tbsps unsalted butter
  • 1/4 cup olive oil
  • 1/4 cup, plus 2 Tbsps grated Parmesan
