I love celery root! So much of it at the market. I usually use less butter, whatever potatoes I get at the farmers' market (unpeeled! I'm lazy and there are good nutrients in that skin), and local whole milk (creamy!) instead of half and half. I'm not very careful about the whole 1 inch thick thing, either. Just chunk it up--or use small potatoes whole--boil it and mash it. Add enough butter and you can't go wrong.

Ingredients for 8 servings

2 large celery roots, about 2 lb. total, peeled and cut into slices 1 inch thick

2 1/2 lb. russet potatoes, peeled and cut into slices 1 inch thick

Kosher salt, to taste

3/4 cup half-and-half

3 Tbs. unsalted butter

Freshly ground white pepper, to taste
