1 14-lb. turkey, giblets and neck bone reserved

1 onion, quartered

1 firm apple (such as Rome, Gala or McIntosh), quartered

1 lemon, quartered

4 cups low-sodium chicken broth

1 tablespoon extra-virgin olive oil

Neck bone and giblets from turkey (do not use liver)

1 onion, chopped

1 celery rib, chopped

1 carrot, chopped

1 sprig fresh thyme

2 bay leaves

1 cinnamon stick

1 firm apple, chopped

2 cups apple cider

1/4 cup all-purpose flour
