Ingredients

1 lb Potatoes (your favorite- I used Yukon Gold) cut lengthwise into 1/4-inch-thick slices

2 cup White Vinegar

2 tbsp extra-virgin olive oil

1 1/2 tsp coarse salt, plus more for sprinkling

1/4 tsp freshly ground pepper

3/4 cup Yogurt plain, low-fat

3/4 cup Extra Virgin Olive Oil

6 x garlic cloves, minced

1 tbsp Dried Thyme

1 tbsp Dried Oregano

1 1/2 tsp Salt

1 1/2 tsp Freshly ground black pepper

1/2 tsp cayenne pepper

6 x chicken breasts boneless, skinless, cut into 1-inch cubes

3 tbsp basil leaves,chopped

5 tbsp lemon juice,freshly squeezed

3 x Red Bell Peppers(large), stemmed and seeded and cut into 1-inch pieces

2 x onions red (large),peeled and cut into 1-inch pieces
