This recipe is very similar to the Philippine arroz caldo (chicken ginger and rice soup). The milk is omitted and fresh ginger, garlic and fish sauce are used to add flavor. The chicken is shredded into tiny bits. Constant stirring during the cooking process gives the soup a porridge-like consistency. Just before serving, fried onion and garlic chips and fresh chopped scallions are used as toppings.

1 cup(s) chopped onions

6 cup(s) water

1/2 cup(s) long-grain rice

3/4 teaspoon(s) ground ginger

3/4 teaspoon(s) garlic powder

1/2 teaspoon(s) salt

1/4 teaspoon(s) ground black pepper

1 egg

2 tablespoon(s) 1 percent milk
