Ingredients for 8 servings

3 1/2 lbs boneless beef chuck roast , trimmed of fat and cut into 2-inch chunks, patted dry

1/2 teaspoon dried thyme

3 cups dry red wine

1/4 lb bacon , cut into 1-inch pieces

2 tablespoons tomato paste

1 large onion , chopped

coarse salt and pepper, to taste

3 large garlic cloves , finely chopped

1/3 cup all-purpose flour

1/2 cup water

6 medium carrots , cut diagonally into 3/4-inch slices
