a handful of fresh cilantro leaves picked and chopped

4 x 14oz pork fillets preferably free range or organic

4 garlic cloves peeled and very finely chopped

teaspoon cumin seeds

a small bunch of fresh thyme leaves picked and very finely chopped

sea salt and freshly ground black pepper

zest and juice of 1 orange

for the marinade

6 tablespoons balsamic vinegar

juice of 1 lemon


cup Heinz organic tomato ketchup
