1/2 preserved lemon, flesh and peel, finely chopped, see Note

-- About 2 heaping tablespoons mayonnaise

1 tablespoon extra virgin olive oil + more to dress greens

1/4 white onion or 2 green onions, finely chopped

1 tablespoon chopped flat leaf parsley

-- A scant teaspoon Dijon mustard, or to taste

-- Fresh lemon juice, to taste

-- Kosher salt, to taste

-- Freshly ground black pepper, to taste

4 cups mixed greens
