Ingredients for 4 servings

2 1/2 lb. plum tomatoes, halved lengthwise

1 1/4 tsp. kosher salt, plus more, to taste

Freshly ground pepper, to taste

1 tsp. extra-virgin olive oil

1 small yellow onion, chopped

1 small garlic clove, minced

1 tsp. sweet paprika

1 cup water

4 tsp. light sour cream

4 tsp. chopped fresh flat-leaf parsley
