4 cup vegetable stock

3 cup frozen peas (you can use fresh if they’re in season)

1 bunch spinach, washed and drained

3 x cloves of garlic, finely chopped

1 medium yellow onion, finely chopped

3 tbsp butter or margarine or extra virgin olive oil

4 sprigs fresh thyme, leaves only

4 sprigs fresh thyme, whole

1 tsp chopped tarragon leaves or dried

2 sprigs fresh tarragon

sea salt

fresh ground pepper

juice of half a lemon (optional)
