  • 1 cup (250 ml) dry white wine or water mixed with 2 tsp (10 ml) lemon juice
  • ½ tsp (2 ml) cracked black pepper corns
  • 4 slices bacon
  • 2 carrots , peeled and diced
  • 2½ lbs (1.25 kg) clams , cleaned (see tips)
  • 1 can (28 oz/796 ml) diced tomatoes , with juice
  • 1 cup (250 ml) water
  • 2 onions , finely chopped
  • 1 cup (250 ml) corn kernels, thawed if frozen
  • 2 cloves garlic , minced
  • 1 tbsp (15 ml) vegetable oil
  • Finely chopped fresh parsley
  • 2 potatoes , finely diced (see tips)
  • 1 cup (250 ml) bottled clam juice
  • 2 stalks celery , thinly sliced
  • 1 tsp (5 ml) dried thyme
