1 cup (250 ml) dry white wine or water mixed with 2 tsp (10 ml) lemon juice

½ tsp (2 ml) cracked black pepper corns

4 slices bacon

2 carrots , peeled and diced

2½ lbs (1.25 kg) clams , cleaned (see tips)

1 can (28 oz/796 ml) diced tomatoes , with juice

1 cup (250 ml) water

2 onions , finely chopped

1 cup (250 ml) corn kernels, thawed if frozen

2 cloves garlic , minced

1 tbsp (15 ml) vegetable oil

Finely chopped fresh parsley

2 potatoes , finely diced (see tips)

1 cup (250 ml) bottled clam juice

2 stalks celery , thinly sliced

1 tsp (5 ml) dried thyme
