350.0g plain flour , plus extra

2 large egg yolks

1 tsp white wine vinegar

Ingredients FOR THE PASTRY

4 egg whites (from the eggs used for yolks in pastry and filling)

1 tsp cornflour

2 whole large eggs and 2 large egg yolks, beaten together

FOR THE FILLING

icing sugar , to decorate

2 x 312g jars good-quality lemon curd

200.0g butter , cold and cut into cubes

140.0g white or golden caster sugar

100.0g golden caster sugar
