1/2 cup coarsely chopped arugula

1/3 cup roasted red peppers, diced

10 cherry or grape tomatoes

1/2 lemon (juice only; 1 1/2 to 2 tablespoons)

1 1/2 tablespoons extra-virgin olive oil
