Ingredients for 4 servings

1/2 cup basmati rice – white or brown will also work

1 can light coconut milk

1 cup unsweetened vanilla almond milk or milk of choice

1/4 – 1/2 cup water - more or less for desired consistency

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup raisins

1/4 cup almonds, chopped and toasted

1/4 cup shredded coconut

1/4 cup agave nectar or honey, divided
