1 cup uncooked hard winter wheat berries, rinsed

2 tablespoons lemon juice

1 cup (4 ounces) cubed smoked gouda

2 shallots, finely chopped

1 bay leaf

Zest of 1/2 lemon, finely chopped

3 tablespoons chopped parsley

1/2 teaspoon salt

1 cup Mt. Athos green olives with kritamo, drained and halved (reserve 2 tablespoons brine)
