1 medium red onion, halved lengthwise and thinly sliced crosswise

2 tbsp vegetable oil

1 to 2 x garlic cloves, finely chopped

1 tsp ground cumin

salt and pepper to taste

2 x 15-ounce cans black beans, rinsed and drained

1/3 cup water

3 x scallions finely chopped

6 x 8- to 10-inch whole wheat tortillas

2 cup coarsely grated pepper Jack cheese (about 8 ounces)

1/3 cup finely chopped fresh cilantro

1 1/2 tbsp vegetable oil
