1-2 cloves garlic, crushed

2 talbespoons organic olive oil

2 organic eggs, beaten

1/4 cup organic vegetable or mushroom stock

2 cups mixed mushrooms, whole or halved

2 tablespoons port wine

1/2 cup polenta

1 medium onion, finely chopped

organic olive oil, to drizzle

2 tablespoons organic butter

flat-leaf parsley, chopped for sprinkling

1 tablespoon cornstarch

sea salt and freshly ground black pepper, to taste

1 teaspoon salt
