One 4-inch piece of daikon, peeled and diced (1 cup)

1 small onion, peeled and coarsely chopped

1/4 cup chopped fresh ginger

1 1/2 cups soy sauce

1/2 cup sugar

1/2 cup mirin (sweet rice wine)

2 teaspoons toasted sesame oil

1/4 cup toasted sesame seeds

3 pounds flanken-cut beef short ribs (cut across the bones)
