8 to 12 ounces bulk Italian sausage, or links with casings removed

1 1/2 -2 tablespoons olive oil

1 yellow onion, thinly sliced (about 2 cups)

2 garlic cloves, peeled and crushed

1 small globe eggplant, peeled and cut into medium dice (about 2-3 cups)

Kosher salt and freshly ground pepper to taste

1 meaty, ripe tomato, or 1/2 pint cherry tomatoes

4 pitas, about 7-inch diameter

1/4- 1/2 cup grated Monterey Jack cheese

1/4- 1/2 cup grated Parmesan cheese

1/2 teaspoon minced thyme

Several basil leaves, torn or thinly sliced
