4 pounds meaty beef short ribs

1/4 cup sugar

3 tablespoons plus 1 teaspoon Asian sesame oil

1/4 cup Korean rice wine or mirin

2 tablespoons minced garlic

3 scallions, thinly sliced

Sesame Salt

1 tablespoon vegetable oil

2 medium carrots, cut into 1-inch lengths

1/2 pound daikon, peeled and cut into 1-inch chunks (1 1/2 cups)

3/4 cup cooked chestnuts (see Note)

1 large Asian pear—halved, cored and cut into 1-inch chunks

4 cups water

1/2 cup soy sauce

1 egg, beaten

Toasted sesame seeds, for garnish
