6 large egg yolks

1 cup sugar

Juice and finely grated zest of 4 lemons (about 3/4 cup)

1 tablespoon plus 1 teaspoon finely grated fresh ginger

1 stick (4 ounces) cold unsalted butter, cut into pieces

1 cup heavy cream

1 pound strawberries, hulled and sliced (3 1/2 cups)
